Slow cooked ribs are my preferred comfort food by far. Did a mix of beef and pork ribs, lightly seasoned with pepper and paprika, together with onions, garlic and carrots. A simple mashed potato as a side dish and bin appétit
Sometimes a simple(ish) omlette does wonders, even if it’s not perfect. ‘cheated’ a bit and added some milk and pesto cheese in the batter since I got a few weird cheeses to play with.
Since it’s always tricky to find free time with a toddler I did the usual cheat bought the pasta, and used frozen spinach. For what it’s worth they are “bio”. To not cut the sauce, after I cooked the onions in a bit of oil, I made a simple roux, with some flour and milk, then added the milk, sour cream, and spinach, keeping the heat really low and slowly increasing it....
Slow cooked beef with sauteed green beans. A cheap cut is always good when slow cooked, together with some light seasoning with paprika, salt and pepper, and with leek, garlic and carrots for some extra flavor. I kept it in the oven for about 6 hours at 140 degrees on ventilation only. The green beans were sauteed with lots of garlic and a touch of butter at the end.
Rustic burgers with home made buns(by the wife) , buffolo mozzarella, onions, potatoes and some hidden pickled cucumbers.
Toddler tortilla with chicken, carrot, bell pepper, zucchini, onion and garlic, lightly seasoned only with dark pepper and a light creme fraiche.
Say no more, 7 hour oven cooked ribs :)
Stuffed chicken file with spinach, onion, bacon and cheese with a simple tomato sauce pasta.
Some sort of chilly con carne with onion, carrot, bell pepper, red beans, white beans,chickpeas, corn, kaiser, pork sausage and of course ground beef/pork meat.
Burger @ home with a twist. Veal burger with a cheddar cheesw filing with home made onion jam, extra cedar cheese and an sour cream sauce with black olives, pickled cucumbers and garlic.
