Quick weekend omelette for my wife. Eggs, a touch of sour cream, the always awesome spring onions and a little bit of bacon
Pasta is happy when it’s wrapped in sauce. Nothing too fancy as usual, sour cream, milk, and a touch of flour for the base, nicely fried onions with panchetta, pork and some black olives.
Healthy and easy to do are on top in my checklist. Oven baked chicken marinated with honey mustard and a simple side made of wok veggies (with baby corn and water chestnut) and rice noodles.
Cooking twice in a day makes Alex a happy camper. Made a simple tomato sauce with garlic, bell pepper and carrots over a crunchy bacon and chicken base. Now the hard part is making the wife wait for the pasta to absorb the sauce a bit. day
Saturday brunch. First time making a Spanish(ish) oven baked omlette.
Experimenting a bit with mashed potatoes. Oven baked potatoes, beet roots and carrots, then mashed them together with milk and some mozzarella cheese. Added some pickled beet so it has a nice contrast with the sweeter mash. Last but not least two types of sausages cooked on the grill on top of the potatoes that hug the veggies.
Chicken soup night. Good for the cold and for the soul.
Some light cooking on Sunday. Seems like radish works well with white cabbage. Keeping the rest of the mix easy to cook with bacon, chicken tights, and bell peppers. Changed the yogurt/sour cream mix a bit and added the green bell peppers in it.
It’s raining with spring garlic over the cheesy potatoes land. You can see here and there the pork trees growing happily.
So tonight is let’s make the fridge clean night. Found cabbage, carrots and some onions. Mixed it well with some bell peppers and chicken brest and my wife helped out making the dough. Some nice pickled veggies and we’re good.
