Scrapheap challange. Yesterday’s leftovers into today’s dinner.
Perfect food to cook when tired. Sote some bell peppers for the sauce, and make a quick marinate for the chicken wings (ketchup, vinegar, paprika, chilli powder, and a touch of sugar) Put the potatoes in the oven first and (more time for the chicken to marinate). As always 30 minutes at 180, then turn the chicken and another 15 tops at 210 so it makes a nice crust.
Leftovers night with a nice sauce. Fried some extra pork and deglaized it with wine, added the leftovers and some wine again, then the chopped up pork after it tested a bit, tomato sauce and some extra basil and garlic.
Sometimes you learn things the hard way. The sauce is only yogurt based so it had a bit of a tang that the onions and sweet corn didn’t cover that well with sweetness. The kalamata olives didn’t help, so note to self to use black ones next time
cuscus night with broccoli, onions and spicy pumpkin seeds.
I am happy that we finally have a cooking brush. Added veggies in the mix as well so it’s also healthy(ish) and the usual refreshing Greek yogurt/cottage cheese mix that today had nice sweet bell peppers in it.
Quick evening dinner
Lasagne with a twist night. Bacon, sausage, onion base then add beef minced meat, carrots, bell peppers and cherry tomatoes sauce. Mozzarella in between and brush it with an egg. (eggcited to have a cooking brush in the house)
Lazy breakfast yesterday. Had some oven baked potatoes from yesterday that I repurposed for our omelette and a nice tomato salad with cheese, perfect for the summer weather Ps: a part of the potatoes were cut in small pieces and fried to replace croutons.
